Gardening Know How Questions & Answers - https://questions.gardeningknowhow.comDoes bok choy crop twice or only once? We have huge leaves and are near Clemson, SC. I don’t want to just jerk the whole plant out, although I had to go save the pest damaged ones. I’m attempting permaculture. Picture taken from resprouted in early October.

You can harvest a few leaves or the entire plant.
Leaving the roots intact and in your growing zone you can have multiple crops.
