Bitter skins on potatoes

We’ve grown potatoes for years, and only the last two seasons have had trouble with the potato skins tasting bitter. Not all of them are bitter, but probably about half the time we bite into a potato its skin is bitter. We don’t use any pesticide sprays or anything like that.
Anyone know what could be causing this and what the solution is?

Typically, sour or bitter flavors can be attributed to an imbalance or a lack of nutrients in the soil. Since this has been occurring for the last 2 seasons, this further leads me to suspect that this is the case. I would have your soil tested and then adjust based on the macro and micro nutrient profile.
