I have a full tree of apricots every year but they don’t ripen. They are big and beautiful but just stay green.

It could be a chilling issue. Like peach trees, if apricots get too little chilling in the winter, the fruits it produces may not develop properly or ripen as they're supposed to. Here is more info: https://www.gardeningknowhow.com/edible/fruits/peach/peach-chill-hours.htm Other possible causes may include a lack of suitable nutrients necessary for fruiting or insect pests.
