Q.Amaranth Seed Harvest
My Baker Creek Seeds Elena’s Rojo Amaranth has exploded. What looked like a sad raised bed is now a forest with up to 2″ stalks. We should get a frost tomorrow <30 degrees. If I understand correctly, 3-5 after the frost is the hang in the garage and gently shake time. Am I correct?

You can harvest before a frost. Cover the flowerheads with a paper bag and hold the end closed tightly. Shake the seeds loose. Alternately, you can lay the flower heads in a plastic container, close the lid, and shake the container to free the seeds.
