What is the seed pod looking thing on the bloom stalk after the bloom is done? What do you do with it?

This is exactly what you described, the seedpod. If you want to try growing the seeds, let the seedpod stay until it is dry, then you can plant the seeds.
Otherwise, simply cut it off.
