Some varieties will have “side-shoots”. The description of each variety usually states if it produces these. They are smaller, but just as tasty. They are harvested and prepared in the same manner. Packman broccoli is a variety I’ve grown for 30 plus years and it has a lot of side-shoots. The main harvest produces a smaller head than that of Premium Crop. Premium Crop has a larger main head, but not many side-shoots. These two varieties are but a few available.
