About super-mature beets

I have beets that I’ve left in the ground for quite a long time – a couple of them are QUITE enormous. Are they ok to eat and can you treat them like normal-sized beets? I’m thinking to cut them in half and over-roast them.

Yes, they are okay to eat. A very large beet will be more dense and somewhat less tender and sweet than a small one of the same variety. However, you can maximize their flavor and sweetness by roasting them.
