Can a celery plant grow in a water bottle? And can the leaves turn blue if you put blue food coloring in its water?

The celery plant can’t “grow” in the sense of metabolizing and increasing its cellular structure in a simple water bottle (celery can be grown in a hydroponic set up, however,) but it’s phloem continues to function for a period of time after it has been cut from the root structure, thus it is able to take up liquid from the bottle, which is why the leaves can take on color if you put coloring in the water, as in the famous child’s experiment.
