I live in Las Vegas where it can get pretty sunny. What could cause my pomegranates to look so off color? Instead of a shiny ruby red skin, I see decidedly duller colors. Some of the ones in the middle of the tree where fruit gets most shade are still white with little red. I do throw coffee grounds and eggshells in the surrounding soil frequently.
I do think that your Pomegranates are suffering from sun scald. Fruit that grows on the outside of the tree would be more susceptible.
The combination of the sun and the white reflecting from your house is likely the cause.
You can try adding some shading to the plant.

I have been reading about this cold hardy version of Pomegranate that is supposed to be able to grow in zone 6a. I live in Connecticut. Know anything about this variety and whether or not it can survive here?
My research shows that testing of the Russian Pomegranate had some success with limited exposure to freezing temperatures.
Remember that growing zones are guidelines and weather patterns vary and may affect your planting.
Look at weather trends to make good planting decisions.
I found a report of a real gardener having success in a zone 6 garden, planted on the south side of their home.
You will need to determine if the time and money are worth playing the planting odds! Good luck.
I have a pomegranate tree (Punica granatum nana). It's October now and the seeds inside the fruit that have grown are still pale white. The outside of the pomegranates are dry and have cracks. Should I expect ruby red-colored seeds or the usual pale white seeds? When should I begin harvesting?
Pomegranates stop ripening as soon as they are picked.
Each cultivator will have different color of fruit ripeness so it is best to know the variety of tree you are growing.
Don't pay as much attention to color but size. A ripe Pomegranate should be between 2 to 5 inches across.
Tap the fruit and hear a metallic sound.
The seeds of ripe the fruit can be white, pink, red and ruby colored depending on the cultivator you have planted.

Some of the branches on my pomegranate bush have died. The bark turns dark and falls off. What is it and how do I treat it?
If the tree is experiencing wet conditions is can become susceptible to several different fungal diseases.
If is difficult to say from your description which fungus could be the issue.
The link below has detail on the most likely conditions and treatment.
If the tree is suffering from Root Rot, it can be very difficult to correct the situation.
Make sure the soil is properly draining.

I have a about 6 year old pomegranate plant that never flowered. I used to prune lightly at the end of winter. I get new shoots but never flowered. I live in Melbourne. Please advise me what I have to do.
It may simply need some fertilizer, but these articles will help you narrow down what could be the cause:

My tree is about 11 years old. It has only produced about 4 pomegranates. It had many blossoms this year, but they all fell off before any fruit started to develop. I never saw any bees on the tree, although there were many bees around it. I tried hand pollinating it last year, but that did not seem to help either. The tree looks very healthy and it gets a lot of sun. I don't think it is over watered because I live in San Diego area and have always had a low water garden. It has drip irrigation and only gets watered 2-3 times a week. Any suggestions? Mary
Over-fertilization, especially with nitrogen, could be one culprit. You may want to get a soil test to make sure nothing is out of range of this tree's preferences. It is also possible that the tree is not being watered enough. Also check for any signs of pests and diseases on the tree.
