How often should you water a peach tree?
This depends on when it was planted. If it's just been planted, the tree will require more watering than one that is already established. Generally, trees need at least 2-3 inches of water weekly (including rainfall), so I would water one or two times a week for at least 15-20 minutes (longer if it has been very hot and dry). I have planted Peach plants (Shaan-e-Punjab) variety in two acres. Plants are two years old. Though growth in maximum number of plants is quite good, I am facing Gummosis (i.e. gum oozing out in some plants). One of the plants which had shown heavy Gummosis has wilted. One of the plants has become brownish in colour. As advised by local horticulture dept, I have applied Borodaux Paint on stems and a spray of Blitox (Blue copper). Please guide. . . .
It is likely peach borers causing this. This article will help:

My problem is that there is clear sap coming from the fruit itself. The peaches grow to about the size of a silver dollar but are not edible because of the sap that oozes from the fruit itself. Can you help me? Thanks.
This is still peach borers. They can attack either the branches or the fruit. This article will help if you have not read it:

Need to know about insects that are attracted to Peach trees, also animals, if any are attracted to this tree. Thanks! We are conducting lots of research on the Peach tree: length of branches, leaves, etc.

Why do some peaches that we buy look beautiful on the outside, but are very dry and tasteless on the inside? They totally lack juice.
This is likely a Brown Rot disease.

Newly planted peach trees and the leaves on the bottom of the tree are falling off. They are not turning color. They are still nice and green and the branches are still green and look healthy.
Newly planted trees will sometimes drop leaves due to stress. They drop leaves to help save water and energy for the roots.
Make sure your applying water. Daily water for the first 2 weeks is important.
