Overnight my beautiful Romaine lettuce has developed a brownish/black crust right in middle/top of the head. Is it a pest, a disease, or what?
It is likely the result of a pest or fungus of some kind. We have found neem oil to be very effective against almost all harmful pests and fungal problems in the garden. This article has more information:

I am growing my leaf lettuce hydroponically. The lettuce stock is very thin and the lettuce will not stand up. How can I get the stock to be more robust?
Sounds like they need more light. Are you growing indoors or outdoors? Indoors, I would increase the amount of light and move the lights closer. If it is outdoors, the area may be too shady.

I have a veggie garden that needs feeding but I don't want to use anything that is not organic. I have toms, lettuce, beetroot, caps and beans all growing together. Plus, toms and beans growing separately. They all look healthy but would like to ensure they stay this way with a good feed. If you can help, that would be great. Thanks.
Compost or manure. This article has other suggestions: https://www.gardeningknowhow.com/edible/vegetables/vgen/fertilizer-options-for-your-vegetable-garden.htm
How often do you water bistro leaf lettuce?
When it gets dry. Too many variables to answer your question...heat, humidity, sun, wind, size of plants, soil type and consistency as well as amount and frequency of watering are all factors determining the answer.
Where can we get Endive seeds to grow in Vanderbijlpark (Gauteng), South Africa?
There are many online seed sources. Enter "buy endive seed" or "vegetable seed" into a search engine.
What kind of lettuce seeds to plant in a container that I can harvest all summer? I bought a large pot last year, with different kinds of lettuce plants and harvested it all summer. Thank you.
Generally, if you allow the plant to flower, it will produce seeds, which you can harvest and save for next season. That said, you can also look for the type of lettuce you have (should have included label) or simply look for any of the leaf lettuce varieties - all of which are easy to grow. Seeds should be available at most garden centers. This article should help as well: https://www.gardeningknowhow.com/edible/vegetables/lettuce/growing-lettuce-containers.htm
