When I harvest a cucumber by cutting the small cucumber, the vine shrivels and dies. What am I doing wrong?

I have many cucumber vines, lots and lots of yellow flowers, and only one cucumber. I have caged my cucumbers to train them to grow upward and not spread out so far. They are in a planting box and inside a greenhouse. I water thoroughly every other day and run fans to keep the heat at bay. Plants look good but I do have a lot of yellowed and wilted leaves on the bottom sides of the plants. Am I overwatering?
Yellowing leaves can indicate a watering issue, to much or to little. It also may be a temperature issue. To hot of temperatures can stress the plant.
If the temperatures are above 85 degrees you may need to water twice a day. You need to actually feel the soil, it should be moist but not soggy.
Make sure the container is well draining.

I am growing cucumbers in the greenhouse. Initially, they were very healthy with lots of flowers. After picking just 2 full size cucumbers from each plant, the leaves have turned yellow and no more fruits are growing. The same thing happened last year.

Can I use yellow cucumbers to make pickles?
I would not use yellow cukes for pickling, as these are normally over-ripe; however, the yellow cucumber variety (I think it's lemon) might be ok to try.

For three weeks I had good tasting cucumbers, but the last 7 days I started getting some bitter ones. Should I throw the bitter cucumbers into my compost pile? Or throw them in the garbage?
As long as they are coming from healthy plants, it should be okay to put them into the compost pile. However, if the plants seem to be affected by a fungus or other issue, I would toss them in the garbage.
Ok, so this is my first garden. I have been watering it regularly. With the heat and lack of rain, I water each section in the evening for about 30 to 45 minutes. I had a soaker hose but everyone has split on me. On especially hot days, I will go out with the hose and soak the ground to cool off the roots. My cucumbers were doing so well that they left their trellis and started smothering the rest of my garden. So as gently as I could, I moved the vines and tried to retrain them to their trellis. Yet, every vine I have moved has died within a few days of me moving it. I don't understand. I have now lost half of my cucumber crop! What can I do to help it and why do they die after being moved?
It is best to not disturb the vines as you may have experienced.

This is my first year gardening and the first of my cucumber crop consists of small round and yellow cukes :( Is there any way to save the rest of the crop or improve the remaining results?? I have read up and found that poor quality soil and inconsistent watering can cause this. Are there any ways to improve what is left?
