The pods will eventually dry out. This is when they are ready to harvest the seeds. Don't wait for too long after they dry, as they will burst open shortly after they are dry and ripe. This is called bolting. Unfortunately, once broccoli bolts, it quickly becomes inedible. To keep plants that are prone to bolting, they need to keep their soil cool. Mulch helps. This article will help you with planting it in the future: https://www.gardeningknowhow.com/edible/vegetables/broccoli/bolting-broccoli-growing-broccoli-in-hot-weather.htm

These are likely to bolt very quickly. I would not remove the head, as this will prevent them from forming a good head later on, but I would make double sure the soil you plant them in stays cool so they do not bolt.

The head of the broccoli are immature flowers. You need to let the broccoli go to flower and allow it to get pollinated. It will lose its flowers and in their place will be little seed pods. They will mature over some time and several seeds will be inside a pod, over an inch long and a bit larger around than the seed. Harvest them when they are dried and tan colored. Break the pods open to get the seeds. This article will help with broccoli seeds: https://www.gardeningknowhow.com/edible/vegetables/broccoli/saving-broccoli-seeds.htm

The broccoli is not harmful -- the part we normally eat is just the unopened flowers -- but it doesn't taste very good. Here's an article on growing broccoli: https://www.gardeningknowhow.com/edible/vegetables/broccoli/bolting-broccoli-growing-broccoli-in-hot-weather.htm
You may have time to help them grow another crop.
