Do I trim what I call the guardian vines that grow very long and bear no berries or are they the first year vines that will bear the next year?

Bought property with over an acre of existing blackberry bushes. We are clearing the acreage to re-establish the bushes on a trellis system. Can we transplant the canes "now" and store the canes in some kind of container until spring planting time and how to store them? We are looking at 100-300 canes and we have 1 gallon buckets available.
I think you'll have better luck with transplanting in the early spring, before dormancy has broken. Here are some articles to help you with general care: https://www.gardeningknowhow.com/edible/fruits/blackberries/growing-blackberry-bushes.htm

The blackberries that I planted were suppose to be sweet. But they are very sour. Is there something I can do to make sweet?
Proper growing conditions and adequate watering are important.

What do they mean by "early spring" to tip prune blackberry bushes? What month? After last frost?
While the plants are still dormant, before the bud and leaf out is the best time.
The month or timing will be determined by your weather.
My blackberries have lots of growth on them but have not set any berries. Do I still need to prune them back?
First year canes do not produce flowers or fruits. Non-fruiting could also be a fertilizing issue. There may be too much nitrogen in the soil, which results in lush growth but little to no blooming (from which the berries form). An addition of phosphorus may be needed to offset this. Bone meal is a good way to add phosphorus.
If you are getting flowers with no fruit, this is typically a pollination issue. These articles may help:

I have a blackberry bush and was wondering how to do tip pruning and where to cut. I don't know where the best place to cut is, so any help is appreciated. Thanks so much for your time!

What if I missed the late summer timing to prune back blackberry bushes? Now in February, how to handle? Trim back to all the way back?
Remove all the canes that were fruit bearing, all the way to the ground.
This can be more difficult following the winter, with snow and wind.
Early Spring pruning is fine, just do before the new growth starts.
Leave 4 to 6 good, healthy canes for each plant.
Prune any lateral or side shoots down to about 12 to 15" inches in length.
